
Its Tuesday peeps! Taco night just got a lot easier (not as easy as hitting up Rusty Taco Dayton – but easy enough)
First of all grab one of those giant rotisserie chickens from Costco. They are far better than Kroger – trust me on this. Remove all the meat and shred it. Toss that with some salsa (either your own or store-bought). Place your tortillas on a baking sheet and brush both sides with oil. Put shredded Monterrey Jack and Cheddar cheese and the shredded chicken mix on top of the tortilla. Place in the oven until the tortilla edges start to brown and remove. Top with shredded lettuce, fold them in half and put into a baking pan. Top with more shredded cheese. Return to the oven just long enough to melt the cheese. Of course, this works with any meat you like. And if you really want to take a walk on the wild side – you can lightly fry your tortilla and then fill it. Delicioso!
