Who only eats waffles for breakfast really? We thought we would twist things up and inspire you with our waffles for dessert. Easy enough for kids to do on their own and to whip up after dinner. They’ll love it enough they will forget all about your skinny jeans and side part!

The general idea is that we took cake mix, prepared it according to the instructions (yes, gasp, we used a box mix – because the idea is “quick and easy”, not “overachiever”) and threw that right into this cute little waffle iron we picked up at Target for $10. We made Chocolate Tacos, Unicorn Waffle Ice Cream Sandwiches, Apple Pie Waffles (brace yourselves- the pie filling was out of a can) and finally, Cinnamon Roll Waffles.

Chocolate Tacos

Devil’s Food Chocolate Cake Mix prepared. Heat up your griddle, spray with cooking spray and put in enough mix to not spill. When waffle is done, hang it over a rolling pin or taco stand for 3 minutes to get that bend and then stick in the freezer until ready to use. We used vanilla ice cream and topped one with strawberries and bananas, one with peanut butter and Reese’s peanut butter cups and the last one with vanilla wafers, marshmallows and chocolate chips and all of them with Ghiradelli chocolate.

Unicorn Waffle Ice Cream Sandwiches

Birthday Party Cake Mix prepared. Make the waffles and let cool. Put softened vanilla ice cream between two waffles and then roll them in Unicorn sprinkles. Stick those in the freezer until ready to serve. You can use crushed Oreos, M&Ms, peanut butter pieces – you get the idea.

Prepare your Spice Cake, make the waffles and top with apple pie filling.

Cinnamon Roll Waffles
