You can pair with traditional pasta, or if you are looking for less carbs – try zucchini noodles,, Shirataki noodles or spaghetti squash. We made this with spaghetti squash but any of the above will work.
What you need:
- 2 racks Baby Back Ribs
- Italian Seasoning
- Marinara Sauce
- Shredded Mozzarella Cheese
- 1/3 cup grated Parmesan Cheese
- Salt and Pepper
- 8 Basil leaves
- Spaghetti Squash
Cover ribs with Italian Seasoning. Bake uncovered at 275 degrees for 2 hours. Wrap ribs in foil and cook for additional 2 hours. Unwrap foil and pull out the bones. Cover ribs with marinara sauce (Rao’s is an excellent choice here). Top with the shredded cheese. Sprinkle additional Italian seasoning. Raise oven to 350 degrees and place back in the oven for 10 minutes. Turn oven to broil and watch for 2-3 minutes to bubble and brown up.
For the spaghetti squash, slice squash in half lengthwise. Scoop out seeds. Brush on Olive Oil and sprinkle with Italian Seasoning. Place cut side down and roast for 30-45 minutes at 350 degrees. You can do this prior to starting the ribs or put in the second two hour window and roast until done for a longer time. Once roasted, use a fork to shred the squash into “noodles.”
Sprinkle the shredded squash with Parmesan cheese. Place a section of the ribs into the squash and sprinkle with more Parmesan.
