
Grilled salad – yes please! If you have not heard of this or tried it- your mind is about to be blown! Very easy and very good!
The How To Deets:
Take a whole head of romaine lettuce and cut it lengthwise down the middle. (Now, the first time I did this – I did it wrong and cut the base off and was left with all the leaves. Don’t fret – it still worked) . Slice tomatoes, onions, zucchini, yellow squash and whatever vegetables you like and put on baking sheet. Roast for 20-30 minutes until soft.
In the meantime, light up that grill! Place the Romaine halves, cut side down for a few minutes then flip. Leave on for another few minutes. You want a slight char – not a wilted burned mess. Remove from grill.
Cut up all the romaine and then put the other veggies on top. We grilled shrimp, steak and fresh pineapple to go with. Also, because it was that kind of night we included roasted brussel sprouts (a la @Mudville9 style) and butternut squash with bacon and Parmesan Cheese.
