Black bean and Corn Cowboy Caviar

My friend gave me this recipe years and years ago and it has always been a fail-safe hit!

1 can black beans, rinsed and drained

2 ears cooked corn on the cob

1/2 red onion chopped

1/2 red pepper chopped

Cilantro

Lime

3 Tbsp Olive Oil

3 Tbsp Rice Vinegar

Salt

Mix the beans, corn, onion and red pepper in bowl.  In a separate small bowl whisk the vinegar and olive oil until combined.  Pour over the bean mix and toss to coat.  Squeeze  juice from half of the lime and salt to taste.
