Avocado Egg Breakfast

Easy, Quick and Healthy –

1 large avocado

2 eggs

crumbled bacon

shredded cheese

butter

Slice an avocado in half and remove the seed.  Cut a thick slice from each half of the avocado.  Lay flat and hollow out the hole to make it a little larger.  Smack some butter into a sauce pan and heat to medium.  When melted, add avocado slices.  Crack one egg into the hole of each avocado.  Sprinkle with salt and pepper.  Cover and cook for 5 minutes.  Add crumbled bacon and shredded cheese, replace the lid and heat until cheese melts.  You can use the rest of the avocado on the side with olive oil and salt or stick it in the fridge and hope it lasts until you remember it!
